“Mumma I haven’t eaten chocolate from past 2 years. This Christmas can you please make some dessert with a little bit of chocolate in it? I promise I won’t eat much,” whispered Vedika in my ear.  How could a mother let go of this humble request that came from a girl, who for me, certainly proved to be the epitome of dedication? Her incredible tolerance became my inspiration in those gloomy days of hopelessness. Sometimes precious life lesson comes from the where we least expect it.

Back to the present, a dessert with chocolate, but also considering SCD illegal ingredients (e.g. refined flour, sugar), here it is Almond Choco chip muffins. Almond flour, honey, some chocolate chips and a wee bit dusting of saccharine (sweet & low) enough to bring that festive feel. Although I abstain from using any artificial sweetener in my cooking, it’s okay to have occasional indulgence in festivals or any special occasion. Also, I would like to mention here that chocolate is not allowed in SCD, but since she is doing well on diet and free from all the symptoms, I have used semi-sweet chocolate in these muffins.

Almond Choco-chip Muffins

A grain-free, starch-free & gluten-free recipe to satiate your sweet cravings that are a great alternative for conventional cake and muffins.

Ingredients

  • 2.5 cup Almond flour
  • 1/3 cup Honey
  • 1/2 cup Hung curd
  • 2 Egg
  • 1/2 tsp Baking soda
  • 1/8 tsp Salt
  • 1/4 cup Butter
  • 1 tsp Vanilla extract
  • 1/3 cup Semi-sweet choco chips
  • 2 tbsp Sweet & low (optional)

INSTRUCTIONS

  • Pre-heat oven to 300 degree F.
  • In a bowl, blend together egg, butter and hung curd. Now add honey, vanilla extract and mix well.
  • Add almond flour, salt, baking soda and give it a good mix. Mix choco chips and put the mixture in muffin pan filling it 2/3.
  • Bake for 20-25 minutes or till the toothpick inserted comes out clean.
  • Once the muffins cool to room temperature, dust with some sweetener. It is totally optional.

Notes

**To make hung curd, strain plain yogurt in muslin cloth at least overnight in the fridge otherwise it will turn too sour. **Amount of honey can be increased or decreased according to taste.
