Ingredients

For cake:

  • 3 cup Almond flour
  • 3/4 cup Honey
  • 1/2 cup Hung curd
  • 1 tsp Baking Soda
  • 1/8 tsp Salt
  • 1/4 cup Melted butter
  • 3 nos Egg

For icing:

  • 1/4 cup Honey
  • 1.5 cup Hung Curd
  • 1/2 tsp Vanilla essence
  • 1/2 cup Strawberry syrup

INSTRUCTIONS

  • Preheat the oven to 350 degrees F or 170 degrees C. Grease an 8” round pan and line with parchment paper.
  • In a bowl add butter, egg & honey and beat with a hand mixer.
  • Now add hung curd, salt, and baking soda. Mix well.
  • Slowly add almond flour and give a nice mix. Pour the batter into the greased pan and place in the oven for 40-45 mins or until the toothpick inserted comes out clean.
  • Making strawberry syrup:
  • Cook 1 cup chopped strawberry with 1 tbsp honey and a pinch of salt till it turns mushy. Strain the liquid.

Icing:

  • Mix hung curd, honey and vanilla essence. Using mixer or blender for mixing the curd and honey is not necessary. Put the icing in the fridge.
  • Once the cake is cold, remove it from the pan with the help of a sharp knife, cut the cake horizontally from the center, making two parts.
  • Drizzle some strawberry syrup on one part and the icing on the second half. Join both the halves. Put icing all over the cake and finish with more strawberry syrup.
