Beetroot Lentil Soup

Beetroot belongs to one of the species of Beta vulgaris plant and is a rich source of folate, manganese, potassium, vitamin C. Having these many dietary essentials, it should be definitely included in our daily diet. Eaten in any form like salad, soup or curry; this nutritious, reddish-pink vegetable never fails to bestow upon its benefits. But, getting kids to eat beetroot can be a humongous task. I used to have a hard time trying to make my kids eat beetroot until I tried this soup. The presence of beetroot makes it highly nutritious, while lentil that is also an ingredient in this soup, makes it a good source of protein too. I usually serve this soup along with some grilled chicken/vegetables and butter toast; which makes an absolutely healthy, comforting and easy-to-make weekend dinner for us.

Ingredients

  • 1 cup Chopped beetroot
  • 2 cup Chopped tomato
  • 1/2 cup Red lentil/ masoor daal
  • 1/4 cup Chopped celery
  • 1/2 cup Chopped onion
  • 1 tbsp Garlic
  • 1 tsp Peppercorns
  • 2 tbsp Butter
  • Salt to taste
  • 1/4 tsp Allspice/ garam masala

INSTRUCTIONS

  • Wash and soak daal.
  • Heat a pressure cooker. Add butter, peppercorns, garlic and celery. Fry for 2 mins then add onion.
  • Fry for 2 min then add tomato, beetroot and soaked daal.
  • Add 3 cups of water,salt and allspice (garam masala). Cover the lid and cook till 3-4 whistle on medium flame or till beetroot turns soft.
  • Let it come to room temperature then grind and strain it.
  • Serve hot with your choice of croutons or toast.
