I got a number of messages after my last post on vegan dessert, requesting to share more of such recipes. Ever since we have discovered a helpful diet that heals the damaged gut, my inspiration to create more of diet recipes (be it vegan, grain-free or sugar-free) has gone a few notches higher. And that sense of gratification I get after these creations are enjoyed by my family and my network of friends, can’t be shared in words.
I know I am a bit late in sharing this most-requested recipe but with Diwali festivities, family and friends, work took a back seat. I am slowly getting back to routine. Here is the recipe of another vegan sweet that I made for a friend this Diwali, or rather I should more specifically say -- lactose-free peda as it has been made using lactose-free milk. He is lactose-intolerant, so he can’t really enjoy most of the Indian desserts as they are milk-based. Here in the States, we do get lactose-free milk easily so I could try, but I'm not sure about the availability of this kind of milk in India or the rest of the places.
It is a lengthy process indeed, continuously boiling milk till it retains a thick mava-like consistency is tiring, but on special occasions isn’t it worth going an extra mile, to get a glimpse of happiness on the face of your loved ones.
