I believe no classic or elaborate dessert can replace the charm of seasonal fruit-based treats. The intense flavor and color acquired naturally with rain and shine seem to portray the soul of the season in a way that nothing else can.

Despite the sweat & heat, one of the reasons I love summer is-- MANGOES!! It is perhaps the most loved fruit across the country. From buds to ripe sweet fruit, in its every form this king of fruit never ceases to amaze me with its diverse taste. All delicacies prepared from any form of mango, have their own story associated with each household; be it pickle, chutney, tangy drinks made from raw mango or innumerable desserts made from ripe ones.

With days getting warmer and mangoes in full swing, my kitchen is all set to whip up some mango delicacies, from raw mango drinks & jams to ripened ones turned into something cool, nourishing drink & luscious desserts like this mango & coconut popsicle aka mango kulfi.

A perfect way to end a meal, with clean flavors of fresh fruit.

Mango & coconut popsicle aka Mango kulfi - a perfect way to end a meal with the flavors of fresh fruit.

Ingredients

  • 2 cup Fresh mango puree
  • 1 cup Coconut cream
  • 2 tbsp Honey
  • 2 drop Mango essence (optional)
  • 1 tbsp Chopped nuts

INSTRUCTIONS

  • Grind mango puree, coconut cream and honey together to get creamy consistency. Mix nuts and essence.
  • Pour in popsicle/kulfi molds. Cover and keep it in the freezer for 6-8 hrs.
  • Popsicle is ready. Enjoy!

Notes

**I have used coconut cream to make it SCD-friendly, but if you want can use an equal quantity of regular dairy cream.
