This is an Indian pudding/kheer that's popular for its rich, creamy texture- soft sago pearls floating in sweetened & thick milk (rabri) garnished with nuts is something that you can’t resist. Also known as tapioca pearls, Sabudana is often consumed during festivals & when fasts are observed. Due to high carbohydrate content, it is quite filling when eaten during a fast. But one doesn’t need to be on fast to relish this scrumptious dessert.

Ingredients

  • 1/2 cup Sabudana(small variety)
  • 5 cup Milk
  • 3/4 cup Sugar
  • 1/4 tsp Elaichi powder/green cardamom
  • 2-3 drops Rose essence(optional)
  • 1/4 cup Chopped nuts
  • 1 tbsp Ghee/clarified butter

INSTRUCTIONS

  • Boil the milk in a heavy bottom pan. Wash sabudana to remove excess starch. Add this to the boiling milk and cook for 15-20 mins.
  • Now add sugar and cook for another 5 mins to get the caramelized flavor from sugar. Switch off the flame and allow it to cool.
  • Heat ghee in another pan, add chopped nuts and fry for 30-40 secs. Add fried nuts, green cardamom powder and rose essence to the kheer. Serve chilled.
