Strawberry Coconut Pudding

Strawberry and coconut make a wonderful combination. The sweet & sour taste of the former complements the nutty yet sweet flavor of the later. Apart from taste what I like most about strawberry is the sweet fragrance that refreshes the mind & soul. Here is a recipe for a simple yet scrumptious pudding that is vegan as well as sugar-free. I was making it SCD friendly so I used gelatin but for those on a vegan diet or are vegetarian can add agar-agar instead of gelatin. Do try this simple pudding and make your Christmas even sweeter.

Ingredients

  • 1 cup Coconut milk
  • 1 cup Fresh strawberries
  • 3 tbsp Honey
  • 1 tsp Vanilla extract
  • 2 tsp Gelatin
  • 1 pinch Salt

INSTRUCTIONS

  • Grind strawberries and strain to remove seeds. Boil it with honey for 2 minutes. Switch off the flame. Save 2 tbsp syrup for garnishing. Mix 1 tsp gelatin in the remaining syrup.
  • Adequately grease muffin mold or any pan of your choice. Heat coconut milk until warm, add honey, gelatin, salt and vanilla extract and mix well. Now gently mix strawberry syrup in it. Do not mix too vigorously. Pour this mixture into the greased mold and let it set for 3-4 hrs
  • Gently de-mold the pudding on a plate. Garnish with strawberry syrup and serve chilled.

Notes

Amount of honey can be increased or decreased according to one’s taste.
