It started with a desire to bake similar cookies that I enjoyed at a friend’s place. The recipe although healthy, didn’t match the SCD protocol. So, I started looking for ways to modify the recipe that would suit V’s diet.
As the name suggests, the process started with looking out for sugar free jam.
Few trips to the supermarket but no such luck, all the bottles contained a long list of preservatives if not sugar, which certainly couldn’t be used (no preservatives/processed food allowed in SCD).
Now the situation left me in a dilemma of either drop the idea of baking these cookies or do everything from the scratch. And of course, I chose the latter.
So, it started with making a batch of sugar free & all kinds of preservative free apricot jam. The first batch though quickly got over, as few spoonsful happily went into tasting and getting the approval of two most difficult to please palate at home.
It is now a regular feature on our breakfast table. Made with just a handful of ingredients and no preservative, this jam in all its sheer simplicity has somehow surpassed the need of commercially produced ones.
And when S remarked this jam certainly deserves a mention in your blog, need I say I’m elated!
