Sweet Tomato Chutney

Chutney holds a significant place in an Indian meal. Though a side dish, it plays a vital role in enhancing the flavor of a meal. Today I am here with a chutney recipe which many of you may not have been familiar with. Sweet tomato chutney can be found in eastern and northeastern cuisines of India. It's a customary side dish made in almost every Bengali home especially in winter, as it is in this season the tomatoes will be in abundance. Tastes great with any kind of paratha, puri.

Sweet tomato chutney can be found in eastern and northeastern cuisines of India. It's a customary side dish made in almost every Bengali home.

Ingredients

  • 5-6 Large tomatoes
  • 2 tsp Oil
  • 1 tsp Fennel seed
  • 1/2 cup Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Red chilli powder
  • 1/4 tsp Turmeric
  • 1 Tbsp Grated coconut (optional)
  • 1 Peanuts (optional)

INSTRUCTIONS

  • Boil the tomatoes in an open pot with sufficient water for 2 mins.
  • Immediately put in cold water once done. Peel off the skin and grind into the puree.
  • Heat a pan, add oil and fennel seeds. Let it crackle then add tomato puree.
  • Add salt, turmeric, red chili powder, sugar, and peanuts.
  • Let it cook on medium flame for 15 mins or till it reaches desired consistency.
  • Coarsely grind the remaining fennel seed in a mortar-pestle.
  • Add grated coconut and fennel seed powder, cook for another minute and take the pan off the flame.
  • Let it cool then store in airtight container or serve with your main dish.
