One cannot imagine holi without thandai in the northern parts of India. Thandai is a refreshing Indian drink made with nuts, spices & flavored with rose and saffron. The spices which are said to have cooling effects on the body, give a nice flavor to this drink when added in moderation. 

Although traditionally thandai is made using cow’s milk, I have tried making a dairy free version of it, since many people don't get to enjoy it due to certain health conditions. You can certainly go ahead and replace the milk and sweetener of your choice. 

But believe me you will hardly find the difference in taste. So this festive season do try this recipe that has the essence of Holi along with your health.

Thandai

Ingredients

  • 2 cup Almond milk/cashewnut milk
  • 2 cup Coconut milk
  • 1/4 cup Pistachio
  • 2 tbsp Melon seed
  • 1 tbsp Poppy seed
  • 1 tbsp Fennel seed
  • 1 tbsp Peppercorn
  • 5 Green cardamom
  • 1/4 cup Honey
  • 3-4 tbsp Rose water
  • 8-10 strands Saffron

INSTRUCTIONS

  • Soak the nuts & spices (except saffron) in water for at least 5-6 hrs.
  • Soak saffron in 1/4 cup of warm coconut milk.
  • Grind the soaked nuts, spices into smooth paste and mix in milk.
  • Strain the mixture for smooth consistency. Now add honey, rose water & saffron milk.
  • Let it sit in the fridge so that flavors & aroma of spices gets infused well.
  • Serve chilled thandai topped with some edible rose petals & pistachio.

Notes

**You can use any nut of your choice like cashew, pistachio, almond or hazelnut except walnut coz it adds a bit of bitterness. **Similarly go ahead with the milk that suits your family.
