Tomato, Carrot & Basil Soup

What is it that I like about soup? Maybe it’s comfort in a bowl. Maybe that intoxicating aroma of garlic sautéed in butter. Maybe it is the hearty sustenance, cheer and soothe it brings when I’m sick.

Isn’t it like a family? Each ingredient having its own characteristic, but enhancing and bringing out the best of others, when combined together. Does anything sound better than cozying up on a cold winter afternoon with a bowl of soup and watching the snow fall outside the window?

Like this tomato, carrot & basil soup. Quick, easy & appetizing. But this time it was made by my husband, for I was down with a cold & headache. All I did was give a few instructions and within 30 minutes he was ready with a wholesome bowl of warm soup. Isn’t life so beautiful with simple things but we tend to complicate it?

For now, I leave you here with this question as I return to my soup before it gets cold !!

Tomato, Carrot & Basil Soup

A quick, easy & nourishing soup for a busy weeknight dinner.

Ingredients

  • 6 Tomato (roughly chopped)
  • 1 cup Carrot (roughly chopped)
  • 1/2 cup Onion (roughly chopped)
  • 3-4 cloves Garlic
  • 1 tbsp Whole black pepper
  • Salt to taste
  • 2 tbsp Butter
  • 7-8 Basil leaves
  • 1/3 cup Celery (roughly chopped)
  • 2 cup Water

INSTRUCTIONS

  • In a pressure cooker, heat butter. Add whole pepper, garlic and celery.
  • Fry for 30 sec, then add onion. Fry for 2 minutes, then add tomato, carrot and basil.
  • Give a quick stir, then add water and salt. Now close the lid and cook on medium-high flame for 2 whistle. Switch off the flame and let the pressure go down.
  • Now open the lid and with the help of hand blender grind everything. You can also grind in the mixer/blender but be very careful as it tends to splash if the mixture is hot.
  • Strain the soup with a strainer. Adjust the consistency by adding more water. Now heat the soup, check salt.
  • Serve warm with some butter and crushed pepper on top.

Notes

**Celery gives a unique aroma and taste to the soup. But you can totally skip adding celery if you don't find.
