Potato always leads the list of my favorite vegetable. Although the list is long from aloo paratha, dum aloo, fried crisp potato to grilled potato along with some spices. But mashed potato happens to be my most relished comfort food when served with hot steamed rice, daal with a dollop of ghee and some freshly squeezed lemon juice. You can cook n number of dishes with this humble veggie, it doesn't need much care and lasts for ages happily without a complaint in the corner of your kitchen.
Aloo methi is a simple, easy-to-make recipe for an everyday meal. The two featured ingredients in this recipe i.e aloo and methi (potato & fenugreek) seem to balance and complement each other's flavor. The pleasing aroma and a slightly bitter taste from fenugreek leaves make this dish distinctive. This is a Jain recipe hence I didn't add onion and garlic but you can add them if you want. It goes well with chapati, paratha or jeera rice. I personally like to have it with plain paratha.
