Aaloo Paratha

Aaloo paratha- one of my favourite breakfast recipes originated in the North, is now popular across India. The soft texture of this paratha with tasty potato filling makes it a favourite among all ages. Adding raw onion and cilantro (hara dhania) gives a distinct aroma while cooking and a perfect crunch and taste while biting into it. Serve this paratha hot with chutney, pickle or raita. Buttermilk also makes a good accompaniment.

Ingredients

For dough:

  • 2 cup Whole wheat flour ( aata )
  • 1/2 tsp Salt
  • 2 tbsp Oil/butter
  • 3/4 cup approx. Water
  • Ghee/butter for cooking
  • 1/2 cup Flour for dusting

For filling:

  • 5-6 Boiled potato
  • 1/2 cup Finely chopped onion
  • 1/2 cup Chopped cilantro/hara dhania
  • 1 tsp or to taste Salt
  • 1/2 tsp Dried mango powder/amchur

INSTRUCTIONS

  • In a bowl mix flour, salt, and oil. Gradually add water to knead into a soft dough. Cover and let it rest for 15 mins.
  • Peel the potatoes and mash it. Mix all filling ingredients together. Make lemon-sized balls from the dough. Similarly, make equal-sized portions from potato filling.
  • Take one dough portion, dust with some dry flour and start rolling into 3” diameter. Put one filling portion inside and seal all edges tightly. Dust with some more dry flour and gently roll into 8" circle.
  • Heat a pan, place paratha on it. Flip it over after 30 sec. Apply ghee or butter on both sides and cook on medium flame till golden brown spots appear on both sides. Remove from pan and serve hot with chutney, pickle or raita.
