Fridays are usually relaxed family time for us, some nice kids friendly movie, few homemade snacks to munch on and a lot of laughter.

Today is one of those usual Friday afternoons, kids are back from school and off to play at neighbor’s home.

Cold and rain altogether left nothing much to do, so I made myself a nice cup of tea and snuggled on the couch with a book, which has been imploring me to finish from a while.

With fog on my glasses

From the still steaming tea

A book in my hand

As I casually read

A catch in my breath

As the climax grows near

I’m deaf to the world:

The book is all I can hear.

My eyes lingered on it, emotions churning within me.

I’m completely lost now, or perhaps I’m found

In this strange paper world, that is far from the ground.

Too absorbed in reading, I didn’t notice when did the kids return home. A gentle reminder from the younger one about the promise I made earlier today, pulled me out from the realm of fantasy. A baked treat to go along with the movie tonight.

A quick glance at the pantry and fridge seeking some inspiration. It has to be something different as well. Muffins won't work today, I knew, nor do I have time for cookies. Few ripe bananas lying in the basket. What if I could make something with banana, I muse...

Almond flour, banana, honey and egg....mixed with love and baked till perfection.

Almond banana walnut bread

Almond banana bread is made with almond flour, banana, eggs & honey.

Ingredients

  • 2 cup Almond flour
  • 2 Ripe banana
  • 2 Egg
  • 1 tsp Baking soda
  • 1 tsp Cinnamon powder
  • 1/2 cup Honey
  • 1/3 cup Chopped walnut
  • 1/4 cup Butter

INSTRUCTIONS

  • Preheat oven to 180 degree C (350 degree F).
  • Line a 9/4 inch loaf pan with parchment paper.
  • In a bowl mix almond flour, baking soda, cinnamon powder. Mash the bananas, mix butter, honey and eggs.
  • Now add dry ingredients in the wet mix. Add chopped walnut, mix well.
  • Pour the batter in the pan, sprinkle some walnut on top if you want. Bake for 30 minutes or until toothpick inserted comes out clean.
  • Oven temperature vary in different ovens, so keep an eye on the loaf.
  • Enjoy warm or cold with tea or coffee.

Notes

**It is okay if the banana bread sinks a little after coming out of the oven, since there is no gluten to hold the shape. **if you don't have loaf pan, bake in any pan you have but keep an eye so as not to burn.
