Avocado Toast with Fried Egg

Sandwiches….. One of my favorite ever breakfast. Be it a busy weekday morning or a relaxed weekend, my family loves sandwiches. I tend to try a lot of healthier variants by putting different veggie stuffings – and this avocado sandwich or I may say avocado toast is one of the best. As it is a rich source of potassium, Vitamin K and mono fats (healthy fats). 
Crisp toasts topped with buttery, gooey, avocados add extra creaminess without adding extra calories in the form of cheese or mayonnaise, while the lime juice brings a sharp acidic contrast to the richness of Avocado. It has all my favorite things crisp toast, soft buttery avocados, crunchy onion, and tomatoes. Avocado and egg make a great combo so I added a fried egg to get benefit from both the ingredients. One can skip adding an egg to make complete vegetarian or vegan sandwich. Also, I have used almond bread to make it grain free sandwich. You can use any bread of your choice.

Avocado Toast with Fried Egg

Avocado toast is one of the best sandwich. Avocado and egg make a great combo,as it is a rich source of potassium, Vitamin K and mono fats (healthy fats).

Ingredients

  • 2 Bread Slices/Almond bread for SCD
  • 1 Ripe Avocado
  • 1/2 Onion (finely Chopped0
  • 1/2 Tomato (finely Chopped)
  • 2 Egg
  • 1 tsp Lime Juice
  • 1/2 tsp Salt or to taste
  • 1 tsp Oil

INSTRUCTIONS

  • Cut and remove seed of avocado. Mash it till it is creamy then add chopped onion tomatoes, salt, and lime juice. Mix well.
  • Toast the bread slices. Heat a pan and add ½ tsp oil then break open one egg and cook on a low flame, sprinkle salt and pepper. Similarly, cook the second egg.
  • Now that all the elements are ready it’s time to assemble, spread avocado mix on both bread slices evenly. Gently place a fried egg on top. Avocado toast is ready, serve it with your favorite drink.
