Carrot & Coconut Shake

I have been asked many questions regarding SCD like how did I introduce the diet for Vedika, what would be her breakfast, etc. So I thought of sharing a few of her favorite go-to breakfast that is super healthy and a time-saver, especially in the morning rush.

Although this has been a long pending post, considering the entire request to share quick, easy & healthy recipes. All those requests are there in my to-do list, but somehow amidst lots of other responsibilities, it got delayed in sharing with you all. I must say thanks for all your patience to bear with me.

So carrots shake for today. I have used coconut milk here. You can use almond milk or cashew milk, whatever suits your taste bud. Boiled carrot, coconut milk, some honey for sweetness and elaichi powder for flavor. Absolute bliss!!!

Carrot & Coconut Shake

Carrot shake is an interesting way to include carrot in your diet.

Ingredients

  • 3-4 Medium sized carrots
  • 2 cup coconut milk/ almond milk
  • 3 tbsp Honey
  • 1/4 tsp Elaichi/ green cardamom powder
  • 2 tbsp Coconut cream (optional)

INSTRUCTIONS

  • Wash and cook carrot for approx. 5-7 minutes. you can also pressure cook or steam the carrots.
  • Let it come to room temperature then grind everything together.
  • Garnish with coconut cream on top. Serve chilled.
