Gluten sensitivity causes several health problems including celiac disease, gastrointestinal problems etc. Gluten is basically a type of protein found in wheat and related grains. A gluten-free diet is an effective treatment for these kinds of allergies. But at the same time, it is a challenge to exclude gluten from your diet. People sometimes start feeling cast-off that they cannot have regular food or they may have to give up on their favorite food. Today I am going to share an excellent breakfast or brunch recipe, that is gluten free as well as SCD friendly.

A breakfast that is rich in protein and low in carbs is definitely going to make your mornings ‘GREAT’. Egg roll typically has wheat flour and eggs in it, but while experimenting with gluten-free & carbs-free recipes for my sensitive family, I came up with this gluten-free alternative which you can say is a dosa egg roll. But unlike regular dosa (crepe) this one doesn’t have rice in it. The result is delicious, filling and at the same time loaded with nutrition.

This egg roll is made with red lentil, egg and veggie stuffing, making it a healthy breakfast recipe.

Ingredients

For dosa /crepe

  • 1/2 cup Soaked masoor dal /red lentil
  • 1 piece Ginger
  • Salt to taste
  • 1/2 cup Water
  • 3 tbsp Oil/butter
  • 3 Eggs

For stuffing:

  • 1 medium Sliced onion
  • 1/2 cup Thinly sliced bell pepper/capsicum
  • 1/2 cup Thinly sliced carrot
  • 1/2 cup Thinly sliced cabbage
  • 2 Chopped green chili
  • 1 tsp Lemon juice
  • 1/4 tsp Crushed black pepper
  • Salt to taste

INSTRUCTIONS

  • Grind soaked dal with ginger, salt & water.
  • Starting with the stuffing, heat oil in a pan, add onion and sauté for 30 secs. Now add all the veggies, fry for 2 mins then add salt, black pepper, lemon juice and switch off the flame. You do not want to overcook the veggies, as they taste better when crunchy.
  • Heat another pan for the dosa, grease with some oil or butter. Put a ladleful of batter and gently spread it all over the pan making a thin crepe (dosa). Drizzle some oil or butter and flip it over after 30 secs.
  • Now break-open 1 egg on the upper side and spread it with a fork. Slowly flip it on the other side and cook it for 30 secs.
  • Serve on a plate, with 2 spoonfuls of stuffing. Roll it & enjoy!
