Namakpare, also known as nimki is a deep fried Indian snack which makes an excellent snack combination with tea. Due to its light, flaky texture and mild flavour, it is a loved by all. Traditionally, it is made with maida (all-purpose flour) with a dash of whole spices, salt, and ghee. However, maida can be replaced with atta (whole wheat flour) for a healthier variant which doesn’t affect the taste.

Ingredients

  • 2 cup All purpose flour(maida)/atta
  • 1/2 cup Ghee/butter
  • 1 tbsp Rava/suji
  • 1/2 tsp Salt to taste or
  • 1/4 tsp Ajwain
  • 1/4 tsp Kalonji
  • Oil to deep fry
  • Water to knead dough

INSTRUCTIONS

  • In a bowl, mix maida, rava, salt, ajwain, kalonji. Add ghee and mix well till it reaches breadcrumb-like consistency. Slowly add water to make a stiff dough.
  • Leave the dough to rest for 15 mins.
  • Heat oil in a pan. Make equal balls from the dough. Start rolling each ball into a thin circle. Cut ½” strips lengthwise or vertically. Again cut ½ “strips horizontally to give diamond shape.
  • Fry on medium heat or until golden brown. Drain excess oil on absorbent paper. Let it cool down then store in airtight container.
  • **Oil shouldn’t be very hot. Fry on medium heat otherwise nimki will remain uncooked from inside.
