Palak paratha-- a recipe that is easy to make, full of flavor and packed with nutrition. It is always beneficial to include spinach in our diet as it is rich in essential vitamins, iron, manganese and it also contains tons of fiber. Kids usually don’t like to eat spinach so this is one of the interesting ways to include this in their diet. I just might post innumerable spinach recipes in future.
Serve this paratha with plain dahi (yogurt), pickle or raita. Personally, I like it with dahi, how do you like yours?

Ingredients

  • 2 Cup Whole wheat flour (Aata)
  • 1 Cup Spinach (finely chopped)
  • 1 tsp Grated ginger
  • 1 tsp Grated garlic (optional)
  • 1 tsp Ajwain (carom seeds)
  • 2 Green chili (chopped)
  • 1 tsp Salt ( to taste)
  • 2 tsp Oil
  • 1/4 Cup Ghee/Butter
  • Water to knead dough

INSTRUCTIONS

  • In a bowl mix flour, salt, ajwain, and oil. Add chopped spinach, ginger, garlic and green chilies. Gradually add water to knead into a stiff dough. Cover and let it rest for 15 mins.
  • Make lemon sized portions of the dough. Take one portion, dust with some dry flour and start rolling. Roll into 5-6” diameter.
  • Heat a pan, place this paratha, flip it over after 30 sec. Apply ghee or butter on both sides and fry until golden spots appear on both sides. Remove from pan and serve hot with your choice of sides.
