Paneer Paratha

Parathas, sometimes served for breakfast, can also be eaten at any time of the day, be it for lunch, dinner or tea-time. Paneer paratha is one such Indian bread stuffed with cottage cheese (paneer) seasoned with spices and herbs. The rich & moist texture that paneer adds, is why it is my favorite. It can be served with chutney, pickle or raita. I personally prefer with chutney.

Ingredients

  • 1 1/2 cup Aata (whole wheat flour)
  • 2 tsp Oil
  • 1/2 tsp Salt
  • as per quantity Water
  • 2 cups Paneer (grated or crumbled)
  • 1 Onion (finely chopped)
  • 2 Green chillies (finely chopped)
  • 1/4 cup Hara dhania (cilantro)
  • 1/4 tsp Ajwain (carom seed)
  • 1/4 tsp Kalonji (nigella)
  • 1/4 tsp Chat masala

INSTRUCTIONS

  • In a bowl mix aata, salt, oil. Slowly add water to make a soft dough. Cover and let it rest for 15 minutes.
  • Mix all stuffing ingredients. Be careful while adding salt as chat masala has a good amount of salt in it already.
  • Divide dough into 8 equal parts. Similarly divide stuffing also. Take one part, dust with dry flour and start rolling into small circles of 3-4”.
  • Place stuffing in the centre and seal the edges. Dust with some dry flour and start rolling gently into a thick circle of 6-7” diameter.
  • Heat a pan, place paratha on it. Flip it over after 30 sec. apply butter on both sides and fry till light brown spots appear on both sides.
  • Remove from pan and serve hot chutney, pickle, or raita
