Rajgira (Amaranth grain) is known for its numerous health benefits. Being a rich source of calcium, iron, vitamins and amino acids, it is often consumed while observing fast as it reduces hunger. Makes me wonder why a grain that is loaded with nutrition is not included in our daily diet? So here is a recipe of nourishing ladoos that are simple to make and are perfect for any special occasion.  Amaranth flour/rajgira flour is slowly roasted in ghee, then mixed with fried sago pearls, sugar & nuts and made into small ball shaped laddoos, share a perfect balance between velvety and crunchy texture. Not to forget the additional quality of this grain being gluten-free.

Rajgira flour is slowly roasted in ghee, then mixed with fried sago pearls, sugar & nuts and made into small ball shaped laddoos.

Ingredients

  • 1 cup Rajgira (amaranth) flour
  • ½ cup Ghee
  • ½ cup Sugar (powdered)
  • 1 Tbsp Sabudana (Sago)
  • ¼ tsp Elaichi (cardamom) powder
  • 1 Tbsp Chopped nuts of your choice

INSTRUCTIONS

  • Heat a pan, add ghee & fry sabudana for 5 mins, take out on a plate.
  • Add nuts to the pan and fry for 30 secs then take out on a plate.
  • Finally, add Rajgira flour to the same pan and fry on low flame for 20-25 mins or till you get a pleasant aroma. Switch off the flame.
  • Mix sugar, elaichi (cardamom) powder, sabudana, and nuts to the Rajgira flour. Let it cool to room temperature then make ladoos & enjoy!
