Desserts have an amazing quality that can turn a basic meal into a classic, an ordinary day into an occasion. Sevai kheer, also known as semiyan payasam is one such dessert from the traditional cuisines of India which is much relished during festivals. Here I have used less sevai/vermicelli to get that rich rabri-like consistency which is much loved in my family. Also, I like to roast vermicelli at home in ghee which gives a nice aroma and taste to the dish. You can always use the roasted vermicelli available in stores.

A bowl of soft noodles (sevai) floating in thick caramelized milk, flavored with cardamom and topped with fried nuts could just be the perfect end to a gratifying meal. Be it a religious ceremony or any special occasion this easy to make a dessert which requires few ingredients, happens to be one of the favorite delicacies in almost every Indian household. I hope the sweetness of this kheer creates sweet memories in your life.

Sevai Kheer

Ingredients

  • 1/2 cup Sevai (vermicelli)
  • 6 cup Whole milk / full fat milk
  • 1/2 cup Sugar
  • 1/4 tsp Elaichi (green cardamom) powder
  • 2 tbsp Chopped mix nuts
  • 2 tbsp Ghee (clarified butter)

INSTRUCTIONS

  • In a heavy bottom pan boil the milk for 10 mins.
  • In another pan, add 1 tbsp ghee and fry nuts to make them brownish. Keep them aside to use later.
  • In the same pan, add remaining ghee and fry vermicelli till golden brown in colour. Add roasted vermicelli to the boiling milk.
  • Boil till vermicelli is fully cooked and milk is reduced to half in quantity.
  • Add sugar and elaichi powder. Give a nice boil and switch off the flame.
  • Let it cool to room temperature, garnish with fried nuts and serve.

Notes

Amount of sugar can be increased or decreased according to taste.
